On the tracks of "The Old Smoke House"

It’s now more than 20 years ago that I met for the first time, Poul Ørum Jensen.

At that time, JP Salmon, “The Old Smoke House”, vas called “Aurora Laks” and had only about 15 employees, today more than 120 persons work in the production permanently. We became immediately good acquaintances. He showed me around the production and makes me taste the products, I was immediately convinced of the excellent quality and from that day we have constantly worked together.


JP Salmon is one of the leading smoke houses in Scandinavia. The salmon and the other fish products as Greenland halibut, tuna fish and more are thoroughly processed and cut into filets, hand salted and cold smoked in the old fashioned smoke ovens as in the ancient time (smoked vertically hanging in the tail) at the factory in Esbjerg on the Danish west coast. This smoke method (about 24-26 hours) is recognised to be the best to obtain the superior quality we want to propose to you and your guests.

Today we are very proud to continue this adventure with JP Salmon in The Gastronomie House.
