chicken with morels and its cream


  • 1 1/4 cups dried morels (about 1 ounce)
  • 1 cup boiling water
  • Cooking spray
  • 8 chicken thighs (about 2 pounds), skinned
  • 1 teaspoon salt 
  • 1/2 teaspoon black pepper
  • 1 cup fat-free, less-sodium chicken broth
  • 2 bay leaves
  • 3 cups hot cooked rice


  • Combine dried mushrooms and water in a bowl
  • Cover and let stand 15 minutes.
  • Drain and keep water for the sauce.
  • Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  • Sprinkle chicken with salt and pepper.
  • Add chicken to pan, and sauté 4 minutes on each side or until browned.
  • Add mushrooms, broth, and bay leaves.
  • Cover, reduce heat, and simmer 20 minutes or until chicken is done.
  • Discard bay leaves.
  • Serve with rice or fresh noodles
