Big Shrimps "a la Plancha", the Max way!

This recipe may be made with and without the singed version

The cooking “a la plancha” is a life style! A real happiness!


  • 1 kilo of raw big shrimps size 30/kg
  • 2 shallots
  • 2 young white onions
  • 1 coffee spoon of powder COMBAVA (see our offer “Madagascar” month of March)
  • Or otherwise juice of 2 lemons
  • 10 centilitres of olive oil
  • 1 green pepper
  • Salt
  • Pepper of Madagascar (see our previous offer)


  • Put down the defrosted shrimps in a dish.
  • Add the ingredients of the marinade: chiseled shallots and the white onions, the pepper cut in liqueur brandy strips, the powder of combava or the lemon juice, the olive oil, the salt and the pepper (if possible of Madagascar!)
  • Mix delicately (by example with your hands, it is even better!)
  • Let marinade in the refrigerator during at least two hours (the ideal, half-day)

At the time of the meal

  • Put a little oil on the “plancha”
  • Let cook 2 to 3 minutes
  • Return when they are pink
  • Add a little juices of the marinade
  • And let cook another 2 in 3 minutes

Can be singed

  • You can serve them as they are, but, if you like, to singe them with an alcohol.
  • Here we have singed a part of it with “Pastis”.
  • Heat up a glass (approximately 20cl) of “Pastis”.
  • When it’s warm, overturn on the plancha and put on fire.

The Shrimps singe

  • As soon as there are no flames anymore, you may serve
