Blinis for your evenings with friends

Blinis for 6 to 8 persons

Time of preparation: approximately 1 hour for the levying and approximately 15-20 minutes for the cooking.

Ingredients for Blinis

  • 140 g of flour
  • 1/5 ltr (20 cl or 200 g) of milk
  • 1 pinch of salt
  • 1 in soup of caster sugar
  • 10 g of yeast molds (in the fresh food department of bakery of your supermarket)
  • 1 whole egg

Elaboration of your Blinis

  • Put your flour in a bottom of hen (big!), the sugar and the salt and mix, please.
  • Pour the milk into a pan with the yeast and the yellow of egg and make warm (40 in 45°C maximum).
  • Put the white of egg in a bottom of hen (means cuts) and place in the refrigerator during the levying of the dough.
  • Incorporate the milk into the flour by whipping (manually or with a mixer) until the obtaining of a smooth and homogeneous pate.
  • For the levying, let rest the pate under a dry cloth during approximately 1 hour.
  • As soon as the levying is ended. Beat egg whites until stiff and later incorporate into the pate delicately with a rubber spoon or equivalent.
  • The pate is now ready to make the blinis, big or small as you like them.

Craftiness: cook in a warm slightly oiled pancake pan (example: sunflower oil). When it is about the use of a frying pan in cast iron (for the cooking in induction), it is necessary to pour more oil into every compartment to obtain a perfect result, you have the impressions that it is a lot, but it is a little like making doughnuts.
