Saffron's Noix de Saint-Jacques

4 to 5 noix de Saint-Jacques by people

1 dose of saffron

20 cl liquid cream

4 shallots

1 tablespoon of olive oil





Clean the noix de Saint-Jacques into cold water and remove the dark tip of the coral
Dry it on absorbing paper
Cut the shallots
Boil it with a tablespoon of grapeseed oil in a frying pan
Put the noix de Saint-Jacques and cook it 2 mn on each side
Remove from the frying pan and keep it hot
Deglaze the frying pan with liquid cream and add the saffron
Reduce a little bit
Salt & pepper as you like
Cover with saffron cream and put chives on it 

Serve with rice basmati
